Oh, friends!
Do I EVER have a recipe for you!
My friends and I had a “snowball fight” party this weekend.
It was really nothing more than an excuse for a girls’ night in the dead of winter.
We had a potluck and everyone had to bring their food in the form of balls for the snowball fight.
How cute is that?
People got really creative with their food and we had a blast.
I’m the least creative person in the entire world. If this were my party, I would have called it, “The reason to get together in the dead of winter” girls’ night.
So, it probably won’t surprise you that I brought meatballs to the party.
I know!
Suuuuch an obvious choice. Not fun or creative at all.
In my defense, they are world famous and I received rave reviews on them.
Even still – I realized how lame I was only bringing meatballs.
So, I decided to bring out the big guns and whip up some of these delightful grapes.
I’m happy I did, too, because I think they’re the perfect appetizer to take with you to a Superbowl party.
They’re quick, require almost no cook time and take your appetizer-bringing routine up a notch.
By the end of 20 weeks of football, we’re all slightly sick of the same ol’ game day grub.
I understand.
This week, be prepared to wow your football friends. These grapes will help you stand out among the crowd.
A little bit sweet, a little bit salty and a little bit toasted walnut-y, they are a pure delight and a welcome break from fat laden foods.
No one has to know how unbelievably easy they are to prepare, either. Let your friends be wowed by you! It can be our little secret.
They’ll make you look fancy in the world of wings and chili.
Go on, now, and get your grape rolling on. You fancypants, you!
Bleu Cheese and Toasted Walnut Rolled Grapes
Yield: About 30 grapes
Source: Adapted Slightly from Giada De Laurentiis
- 1 ¼ cups walnuts
- ¼ cup fresh parsley, chopped
- ¼ cup sugar
- 1 ½ oz. cream cheese
- 1 ½ oz bleu cheese, crumbled
- ¼ cup cream
- ~30 grapes (I used red for a nice color contrast, but green’ll do ya just fine)
Pre-heat oven to 350. Place walnuts on a baking sheet and toast until lightly fragrant. Remove and, when cool enough to handle, finely chop.
Meanwhile, beat cream cheese, bleu cheese and cream with an electric mixer until smooth in a small bowl.
In another small bowl, mix sugar, parsley and toasted walnuts.
Using two forks, roll the grapes in the bleu cheese mixture and then immediately into the sugar/walnut mixture.
Place grapes on a parchment lined baking sheet when done rolling and refrigerate until serving.
Enjoy!
